A refreshing, summery cocktail that blends juicy watermelon with crisp rosé. Perfect for hot days, poolside parties, or anytime you need a sip of sunshine!
Ingredients (Serves 2 – 3)
- 4 cups fresh watermelon, cubed (seeds removed)
- 1 cup Leopard’s Leap Rosé (chilled)
- 1 – 2 tablespoons fresh lemon juice (to taste)
- Optional: 1 – 2 tablespoons honey or simple syrup (only if your watermelon isn’t very sweet)
- Optional: Handful of ice OR freeze the watermelon cubes for a thicker, slushier texture
Garnish
- Watermelon wedges or mint sprigs (optional)
Instructions
- Prep the watermelon
If you want a thicker slushie, freeze the watermelon cubes for at least 2 – 3 hours. Otherwise, use fresh cubes and add a handful of ice to the blender.
- Blend
Add watermelon, chilled rosé, lemon juice, and honey (if using) to a blender. Blend on high until smooth and frosty.
- Taste & adjust
If you’d like it sweeter, add a little more honey and blend again. If it’s too thin, add ice or a few more frozen cubes and blend once more.
- Serve
Pour into chilled glasses and garnish with a mini watermelon wedge or mint sprig.
